Ou alors vous faites partie de ceux qui le d\u00e9testent \u00e0 cause des poivrons, du concombre etc.. Dans les deux cas, j\u2019ai potentiellement de quoi r\u00e9concilier tout le monde. Sauf si n\u2019aimez pas la tomate, dans ce cas je ne peux rien pour vous !<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Le salmorejo donc, c\u2019est son nom, est une soupe froide \u00e0 base de mie de pain et de tomates. Dans cet ordre car le pain est l\u2019ingr\u00e9dient star de la recette. Il est tout \u00e0 fait possible d\u2019utiliser de la mie de pain rassis (sec) pour r\u00e9aliser cette recette, c\u2019est d\u2019ailleurs g\u00e9n\u00e9ralement l\u2019option que je choisis.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Mais le salmorejo c\u2019est un peu plus qu\u2019une soupe puisque sa texture peut aller de la soupe \u00e0 la pur\u00e9e. Tout d\u00e9pend de l\u2019humidit\u00e9 de vos tomates, de la quantit\u00e9 de mie, de la proportion d\u2019huile que vous ajoutez. Sa diff\u00e9rence majeure avec le gaspacho c\u2019est que sa texture provient du m\u00e9lange entre l\u2019humidit\u00e9 et l\u2019huile d\u2019olive : l&rsquo;\u00e9mulsion. Le m\u00eame principe que pour la mayonnaise. La quantit\u00e9 d\u2019huile est cependant beaucoup plus faible que dans la mayonnaise, vous le verrez dans les ingr\u00e9dients.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Il peut se d\u00e9guster en entr\u00e9e, en accompagnement ou en plat principal, \u00e0 votre convenance. Je l&rsquo;ai personnellement mang\u00e9 en plat principal avec une salade de jeunes pousses, des feuillet\u00e9s \u00e0 la tapenade et une tranche de pain de campagne ( \u00e0 plonger directement dans le salmorejo miam !)<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La recette s\u2019adapte \u00e0 vos envies. De plus, il se d\u00e9guste avec une garniture g\u00e9n\u00e9ralement compos\u00e9e de jambon cru ou sec, d&rsquo;\u0153uf dur et d\u2019un filet de vinaigre (de x\u00e9r\u00e8s ou balsamique).\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">On peut cependant imaginer 1 000 autres garnitures avec ou sans viande : olives, d\u00e9s de concombre (ou courgettes), feuilles de basilic, chorizo, des cro\u00fbtons (\u00e0 base de vieux pain), menthe, graines de tournesol\/courge\/lin etc&#8230; Et varier les vinaigres : x\u00e9r\u00e8s, balsamique, cr\u00e8me de balsamique etc..\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Ma version pr\u00e9f\u00e9r\u00e9e ? Un salmorejo traditionnel un peu \u00e9pais consomm\u00e9 en plat principal et agr\u00e9ment\u00e9 d&rsquo;\u0153uf, de jambon cru et un l\u00e9ger trait de balsamique ! J&rsquo;ai cependant test\u00e9 une seconde version v\u00e9g\u00e9tarienne que j&rsquo;ai beaucoup aim\u00e9 (les photos se trouvent plus bas) avec des graines de tournesol, du basilic cisel\u00e9 et un peu de paprika.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Petit bonus : cette recette s\u2019appr\u00e9cie sans cuisson, sans temps de repos et avec tr\u00e8s tr\u00e8s peu de pr\u00e9paration. Dans un saladier, placez le pain et l&rsquo;ail au fond.\u00a0<\/span><\/li>\n<li>Arrosez le pain avec 2 cuill\u00e8res d&rsquo;huile d&rsquo;olive et une cuill\u00e8re de vinaigre.
