Ce l\u00e9gume mal aim\u00e9 provoque g\u00e9n\u00e9ralement des r\u00e9actions plut\u00f4t unanimes. Associ\u00e9 \u00e0 des mauvais souvenirs d\u2019enfance et de cantine du midi, il a tr\u00e8s mauvaise r\u00e9putation en termes de go\u00fbt. Ayant tr\u00e8s peu mang\u00e9 \u00e0 la cantine dans mon enfance, le choux de Bruxelles ne fait sonner aucun signal d\u2019alerte dans mon cerveau. C\u2019est donc sans trop de r\u00e9flexion que j\u2019ai d\u00e9cid\u00e9 de le cuisiner apr\u00e8s en avoir aper\u00e7u dans mon supermarch\u00e9.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La fa\u00e7on la plus simple de les d\u00e9guster (et d\u2019esp\u00e9rer les appr\u00e9cier) est de les acheter frais et de les faire r\u00f4tir ou po\u00eal\u00e9s. Pour cela il suffit de couper le pied puis de retirer les feuilles ab\u00eem\u00e9es. Vous pouvez ensuite les disposer sur une plaque de four et les laisser dorer ou, comme moi, les faire po\u00ealer.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Beaucoup de recettes sur le net proposent des associations bacon et sirop d\u2019\u00e9rable. Pour ma part, j\u2019opte plut\u00f4t pour des tranches de lard fum\u00e9 que je d\u00e9taille en lardons \u00e9pais.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Si vous \u00eates v\u00e9g\u00e9tariens, vous pouvez utiliser du tofu par exemple pour les remplacer mais je vous conseille de prendre dans tous les cas un simili carn\u00e9 fum\u00e9. Si vous n\u2019appr\u00e9ciez pas les simili carn\u00e9 vous pouvez aussi utiliser un autre l\u00e9gume (carottes ou champignons) et un aromate au go\u00fbt fum\u00e9 (sel fum\u00e9, paprika fum\u00e9, fum\u00e9 liquide etc\u2026).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Je trouve que la saveur fum\u00e9e se marie super bien avec le go\u00fbt du chou quel qu&rsquo;il soit. Dans le cas du chou de Bruxelles et surtout si c\u2019est un l\u00e9gume que vous n\u2019appr\u00e9ciez pas trop, cela peut vraiment faire toute la diff\u00e9rence.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pour parfumer et ajouter une saveur un peu sucr\u00e9e, j\u2019ajoute donc une \u00e0 deux cuiller\u00e9es de sirop d\u2019\u00e9rable. Cela permet \u00e9galement de faire caram\u00e9liser les choux de Bruxelles et de neutraliser un peu l\u2019odeur caract\u00e9ristique du chou. Vous pouvez le remplacer par du miel ou tout autre sucrant liquide.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">J\u2019ajoute \u00e9galement des oignons rouges \u00e0 la fois pour leur croquant un peu piquant\u00a0 et leur go\u00fbt sucr\u00e9. Je trouve qu\u2019il se m\u00e9lange \u00e0 merveille avec les autres ingr\u00e9dients et apporte de la saveur au plat.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Convaincu(e) ? Coupez les aubergines et les carottes en d\u00e9. Plus les d\u00e9s sont petits plus ils cuiront rapidement.\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Pour ma part, je mixe un peu l\u2019ensembles \u00e0 la fin mais vous pouvez choisir de garder les morceaux.\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Coupez (ou hacher) finement les oignons et l\u2019ail. Faites revenir les oignons dans un filet d\u2019huile. Lorsqu\u2019ils commencent \u00e0 dorer ajouter l\u2019ail. Ajoutez les carottes, laissez cuire quelques minutes puis ajoutez les cubes d\u2019aubergines jusqu&rsquo;\u00e0 ce qu\u2019ils colorent aussi.\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Ecrasez \u00e0 la main les tomates concass\u00e9s (ou mixer les pr\u00e9alablement au mixer si vous ne souhaitez pas repeindre votre cuisine). Portez \u00e0 \u00e9bullition.\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Diluez le bouillon dans 500ml d\u2019eau puis versez la pr\u00e9paration dans votre casserole. M\u00e9langez bien puis incorporer les \u00e9pices et vos lentilles corails. Salez, poivrez.\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Vous pouvez choisir de mettre ou non de la p\u00e2te de curry.
